Lactose-free whipping agent

Cognis’ new Lamequick VE 28 topping base is made of soy protein and vegetable oil. It is suitable for products that use claims such as “milk-protein free,” “lactose-free,” “100% vegetarian” and “100% vegan” on their labels. It does not contain milk derivates or other animal-sourced ingredients and is 100% based on vegetable ingredients. As it is made from non-hydrogenated fats, Lamequick VE 28 is also eligible for donning the “vegetable fat” clean label. The ingredient offers functional benefits such as high foam volume and a creamy mouth feel for applications such as desserts, especially ice cream.
