Study: Blue tortillas healthier than white corn ones

Dated: 1 August 2007

Those on a diet might want to try swapping white corn tortillas for blue ones.

A recent study by scientists in Mexico have found that tortillas made from blue corn had less starch and a lower glycæmic index than their white counter parts. Foods with a lower glycæmic index are considered healthier as they release sugar into the bloodstream at a slower rate.

Blue tortillas were also found to have 20 percent more protein than white ones, according to the study published in the Journal of the Science of Food and Agriculture.
