An active film containing natural antioxidants may enhance the stability of both myoglobin and fresh meat against oxidation processes says a Spanish study from CPS-University of Zaragoza. Scientists say they found a promising way to extend the shelf-life of fresh meat, by immobilizing natural antioxidants in polypropylene film.
