Palsgaard Fat-reduced Aerated Quark

Palsgaard says its new stabilizing and texturing system makes it possible to produce a chilled, quark-based aerated dessert with 0-2.5% fat. The company says manufacturers can replicate similar organoleptic characteristics found in a higher fat version.
